Truffle-growing abilities of common hornbeam

The common hornbeam (Carpinus betulus) is one of the few forest species that can live in symbiosis with the Italian white truffle. Sometimes called hornbeam, it is a fairly common tree in the forests of Central Europe. This tree has all the qualities required for truffle cultivation: it grows relatively quickly, can withstand repeated and severe pruning, and is adapted to the different types of soil in Western Europe. Although it is very resistant to frosts and heat, it does not grow very high in the mountains (1000 m altitude maximum). Not very exigent on the nature of the soil, it prefers nevertheless the silty and fresh soils benefiting from a sunny or semi-shaded exposure.

About the white truffle of Alba (Tuber magnatum)

Growing white truffles from a common hornbeam plantTuber Magnatum, is the rarest but most famous (and therefore most expensive) of truffles. It is called white truffle of Alba ("tartufo bianco di Alba" in Italian), from the name of a town in Piedmont that has based its reputation on this famous mushroom. The white truffle can be recognized by its white and smooth peridium. Inside, the flesh of the mushroom is white and marbled. The white truffles are known for their delicacy and their intense and incomparable perfume. This species of truffle is mainly eaten raw.
