Truffle-farming abilities of the kermes oak

Sometimes also called "scrub oak", the kermes oak (Quercus coccifera) is small. It is particularly adapted to drought, wind and sea spray, which explains why it is often found in the scrublands and maquis of the Mediterranean region, in calcareous, dry, rocky and sunny soil. Less hardy than the evergreen oak, the kermes oak does not grow at high altitudes (it does not tolerate the cold beyond -12° C). It is a robust shrub, with a very slow growth rate. It has a very dense root system which predisposes it to truffle cultivation as long as it is planted on well-drained limestone soil, without stagnant humidity. All these characteristics make the kermes oak an excellent host for tuber melanosporum.

About the Black truffle (Tuber melanosporum)

Growing black truffles from a kermes oak plantA true "black diamond", Tuber melanosporum is as rare as it is sought after. It can be recognized by its rounded shape, sometimes bumpy, and its black flesh marbled with white. This truffle gives off an intense perfume and reveals fine aromas that make it an exceptional mushroom. Emblematic of French gastronomy, the black truffle can be eaten cooked or raw, as a seasoning or as an accompaniment to a dish. Black truffles are harvested from November to early March. Depending on the age of the plant and the land chosen, you will have to wait between 6 and 8 years to harvest your first black truffles.
