Truffle-growing abilities of the east hornbeam
Initially known for its ornamental qualities, the East Hornbeam (Ostrya carpinifolia) is on the short list of host species that can live in symbiosis with the Black truffle. Although native to southern Europe and the Near East, the east hornbeam is resistant to frost, to temperatures between -15 and -20 °C for short periods of time and in fairly dry soil. A neutral or chalky soil is well tolerated by this tree which likes clayey or sandy soil. It is able to grow in stony soil, but will remain in this case much lower and will take more the aspect of a big shrub.
About the Black truffle (Tuber melanosporum)
A true "black diamond", Tuber melanosporum is as rare as it is sought after. It can be recognized by its rounded shape, sometimes bumpy, and its black flesh marbled with white. This truffle gives off an intense perfume and reveals fine aromas that make it an exceptional mushroom. Emblematic of French gastronomy, the black truffle can be eaten cooked or raw, as a seasoning or as an accompaniment to a dish. Black truffles are harvested from November to early March. Depending on the age of the plant and the land chosen, you will have to wait between 6 and 8 years to harvest your first black truffles.
